5 Minute Power Lunch

I’ve got a full on obsession with toasted sweetcorn, I think it's the best thing ever. So here’s a quick and easy recipe, using lots of leftovers that only takes 5 mins to make.


Serves 1:

1/2 a tin of sweetcorn, drained

1/2 a pack of broccoli

1/4 red cabbage, sliced

Some @boldbeanco butter beans

1/4 cucumber, sliced

Leftover roast chicken

Smoked almonds (I like the @waitrose) ones, chopped

Good drizzle of miso & sesame dressing


1. Add some oil into a frying pan over a high heat, and add your sweet corn. Let it POP and turn golden.


2. Boil your broccoli (it doesn’t need long!)


3. Prep all your other ingredients, and throw them into a bowl. Top with your miso & sesame dressing (don’t hold back!) and finish with your toasted sweetcorn. Enjoy!
