I threw this together for lunch yesterday with what I had left over in the fridge. Kinda had Caesar vibes, with the bacon, Parmesan and anchovies, but was a bit fresher. Perfect for the sunny weather, and a really quick and easy one too.
Serves 1:
A handful of lettuce leaves
Handful of pomegranate seeds
4 rashes of bacon
A handful of Bold Bean Co chickpeas
1/4 cucumber, cubed
Sun-dried tomatoes, chopped
3 anchovies, thinly sliced
Shavings of Parmesan
Generous drizzle of everyday house dressing
1. Fry up the bacon until it’s nice and crispy.
2. Assemble everything else in a bowl and toss generously with your everyday house dressing.
3. Finish with shavings of Parmesan
