I’ve eaten this dish over 3 times already this week, and will probably have some kind of variation of it again this evening! It’s quick, comforting and the addition of the tahini & lime makes it really creamy, zesty and delicious.
Serves 2:
2 courgettes, sliced into rounds
700g white beans (I used Bold Bean Co)
1 garlic clove, crushed
1/2 red onion, diced
200ml chicken or vegetable stock
A handful of basil, chopped
Parmesan, grated
Generous squeeze of tahini & lime dressing
1. Add some oil to a pan over a medium high heat and fry your courgettes for a couple of mins on both sides until golden. Then remove from the pan, and place on some kitchen roll.
2. Add some more oil to the pan, and then add your onion. Sauté for a couple of mins until softening, and then add your crushed garlic. Stir well until soft and then tip in your beans.
3. Pour in your stock and stir well. Simmer for 4-5 mins until the stock reduces, and your beans look nice and creamy.
4. Once happy with your consistency, drizzle over the tahini & lime dressing, and place the courgettes on top. Scatter over the chopped basil, and grate over some Parmesan.
5. Spoon into bowls and drizzle over more tahini & lime dressing. Finish with some cracked black pepper!
