This is a good recipe to have up your sleeve for days when you’ve got little in the fridge, but want something quick, easy and delicious. You could mix up the veg here, and add any extra protein, like chicken, beef or salmon!
Serves 1:
1 nest of noodles
1 leek, finely sliced
Handful of peas
A generous drizzle of miso & sesame
Flaked almonds, crispy onions, chilli flakes, to garnish
1. Cook your noodles as per packet instructions. 2 mins before the end of their cooking time, add the peas.
2. In a large frying pan, fry off your leeks with some oil and a pinch of salt over a medium high heat until they start to caramelise.
3. Drain your noodles & peas, and add them to the caramelised leeks.
4. Turn down the heat and generously drizzle over the miso & sesame dressing (tongs will help to mix it all through).
5. Serve up into a bowl and top with toasted flaked almonds, crispy onions and chilli flakes. Enjoy!
