Looking for something quick, easy and healthy in under 10 mins? Then this recipe has got you sorted! It's got all the crunch from the fresh veg, stickiness from the miso salmon and it’s nice and filling from the noodles!
Serves 1:
1 noodle nest
1 salmon fillet, skin removed and cut into large chunks
1/2 pack of beansprouts
1 carrot, peeled into ribbons
1/2 packet of tender-stem broccoli, ends trimmed
Generous drizzle of miso & sesame dressing
Crispy onions & black sesame seeds to garnish
1. Cook your noodles as per packet instructions. In the last 20 seconds of cooking, add your broccoli.
2. In a frying pan over a medium high heat, add 1-2 tbsp oil. Once hot, add your salmon. Fry for 3-4 mins, until starting to go crispy and golden on all sides.
3. Then add your carrot and bean sprouts to the pan, and drizzle a generous amount of miso & sesame dressing.
4. Tip your cooked noodles and broccoli into the pan, and stir well. Then remove from the heat and plate up.
5. Top with crispy onions, black sesame seeds and a very generous squeeze of miso & sesame dressing to finish!
