A super simple, zingy and crunchy salad that I would happily eat on repeat.
Serves 1:
1 tin of tinned tuna in sunflower oil
1 baby gem lettuce, shredded
1/2 and onion, finely chopped
1/2 pouch of Merchant Gourmet puy lentils
1/2 a pack of fine green beans
A handful of salted capers
A generous drizzle of everyday house dressing
1. Cook your green beans for a couple of beans in some boiling salted water.
2. Warm through your grains as per pack instructions.
3. Assemble everything together and squeeze a generous amount of everyday house dressing on the top.
