Green Goddess Orecchiette Salad

Can the love of your life really be a pasta salad?

We think so. But only if it’s dressed well (obviously).

Orrichiette, heaps of peas, beans, courgette and a very generous drizzle of our green goddess dressing - you can’t really go wrong.

 

INGREDIENTS

Serves 2:

200g orecchiette pasta

1 medium courgette (thinly sliced)

150g frozen peas

1 can butter beans (drained and rinsed)

2 cloves garlic (minced)

50g feta cheese (crumbled)

30g shelled pistachios (roughly chopped)

2 tbsp olive oil (for sautéing)

Good drizzle of our Green Goddess dressing

INSTRUCTIONS

Step 1: Bring a large pot of salted water to a boil. Add the orecchiette and cook according to package instructions. In the final 2 minutes of cooking, add the peas to the pot. Drain both and set aside to cool slightly.

Step 2: Heat the olive oil in a pan over medium heat. Add the thinly sliced courgette and cook until softened and slightly browned. Add the minced garlic and sauté for 1 minute until fragrant, then remove from heat.

Step 3: In a large mixing bowl or on a platter, combine the cooked pasta, peas, sautéed courgette, and the drained butter beans.

Step 4: Top with the crumbled feta and the roughly chopped pistachios for crunch.

Step 5: Drizzle generously with our Green Goddess dressing. Toss gently to coat and serve hot, or refrigerate to enjoy as a cold pasta salad.
