Disclaimer. I ate this for lunch & supper last night. The weather is HOT, and summer salads are what I’m craving right now. Something quick, cooling and crunchy.
Serves 1:
Good handful of kale
1/2 avocado
Handful of smoked almonds, chopped
2 chicken goujons
5 new potatoes, halved
Grated parmesan
Squeeze of tahini & lime dressing
Method:
1. Cook your goujons according to pack instructions.
2. Add your potatoes to some salted boiling water and cook until tender (around 8-10 mins).
3. Meanwhile, massage your kale with a generous drizzle of your tahini & lime dressing, and scoop out your avocado flesh.
4. Top with smoked almonds, your sliced breaded chicken and cooked new potatoes.
5. Finish generously with grated Parmesan and more tahini & lime dressing. Enjoy!
