Sometimes, nothing beats a potato salad. But this is not your average potato salad!
It’s dressed properly with our Everyday House dressing and uses Westlands UK micro-herbs + flowers for an unexpected zhuzh.

INGREDIENTS
Serves 2:
300g (approx. 2 generous handfuls) New Potatoes
2 Smoked Peppered Mackerel fillets
1 handful Westlands Shoot Mix
1 handful Westlands Italian Mix
1 small pinch Earthy Red Amaranth
All Dressed Up Dressing (Everyday House)
1 tbsp Olive oil (for coating)
Optional: Edible Violas for garnish
Sea salt and cracked black pepper to taste
INSTRUCTIONS
Step 1: Place the new potatoes in a pot of salted water. Bring to a boil and simmer for 15–20 minutes until tender (a knife should slide through easily).Step 2: While the potatoes are boiling, gently toss the shoot mix, Italian mix, and red amaranth together in a large bowl. Set aside.
Step 3: Drain the potatoes and allow the steam to billow off for a moment. Slice the potatoes into halves or quarters while warm, then toss with 1 tablespoon of olive oil and a pinch of salt. Let them cool to room temperature before moving to the next step to prevent the delicate micro-herbs from wilting.
Step 4: Once cooled, add the potatoes to the herb mix. Apply a generous drizzle of the All Dressed Up Dressing and toss gently until everything is lightly coated.
Step 5: Transfer the mixture to a large serving platter. Flake the smoked mackerel into bite-sized chunks over the top. Scatter the edible violas for a pop of color.
Step 6: Finish with a final drizzle of dressing to taste and serve immediately.
