Something for the weekend, lunch, or any time of day really! It’s easy to make, delivers on flavour, and takes no time at all! Plus you can just use whatever leftovers you’ve got in the fridge, and it’ll still be tasty.
Serves 1:
80g cooked rice (ideally cold, as it works better)
1/2 courgette, grated (pat it dry between 2 pieces of kitchen roll, to absorb some of the wetness)
1 egg (I like Clarence Court)
1/2 packet of ham, torn into pieces
A generous drizzle of miso & sesame dressing
Spring onions, sliced (I didn’t have any, but they would have been a nice addition, as would peas!)
1. Drizzle some oil into a frying pan over a medium high heat and add the rice. Cook for a couple of mins until it starts to brown a bit, and then add the courgette.
2. Cook for a couple more mins until the courgette is starting to go a little crispy.
3. Turn down the heat, move the rice and courgette to the side of the pan, and crack the egg in. Let it set for a few seconds, and then stir it in quite quickly.
4. Turn off the heat, and stir through your ham and miso & sesame dressing. Enjoy!
