This is one with all the good stuff, grains to keep you going, toasted sweetcorn, creamy avocado and that zingy miso & sesame hit!
Serves 2:
100g giant couscous
1/2 bag of kale
2 chicken breasts, cut into chunks
1 tin of sweetcorn, drained
1 avocado
1/2 cucumber, diced
Generous drizzle of miso & sesame dressing
1. Cook your giant couscous as per packet instructions.
2. Add some oil to a frying pan over a medium high heat. Add the chicken and pan fry for 2-3 mins. Then add the sweetcorn and fry for another 2 mins, or until starting to crisp up and golden. Drizzle over the miso & sesame dressing (you might want to add a lid to the pan to stop it spitting!) and then turn off the heat.
3. Add the kale to a large salad bowl. Drizzle over a generous amount of miso & sesame dressing and massage it for a 30 seconds or so, until it starts to turn bright green and soften a little.
4. Top with avocado, chicken, sweetcorn, cucumber and cooked couscous and finish off with more miso & sesame dressing.
