Designed to be quick to make, full of flavour and healthy(ish!) This recipe for miso mushrooms on toast is so easy, it doesn’t really require a recipe! But here’s one just in case.
Serves 1:
2 pieces of good quality sourdough
1 punnet of mushrooms, roughly chopped
1 clove of garlic, crushed
2 tbsp Philadelphia
Large knob of butter
Generous drizzle of miso & sesame
Parsely, to garnish
Rocket, as a side
1. In a large frying pan, melt your butter over a medium heat. Add the mushrooms and sautè for 5 mins.
2. Meanwhile, get your toast on.
3. Lower the heat, and stir in the garlic. Then squeeze over your miso & sesame dressing, and stir well until caramelised.
4. Dollop the Philadelphia on your toast and top with your mushrooms.
5. Sprinkle with parsley and serve with rocket on the side (drizzled with more miso & sesame dressing). Enjoy!
