Tastes like it took you hours, secretly took you minutes. Quick and easy (but very impressive) hosting salad. Our cheat code Salsa Verde Butter Bean Salad on a platter of peppery rocket, creamy burrata and pan fried courgette.
INGREDIENTS
Serves 2:
1 cup of coriander
1 cup of flat-leaf parsley
A generous glug of olive oil
A generous squeeze of Everyday House dressing
Teaspoon of capers
1 bag of rocket
2 handfuls of butter beans
Half a courgette, sliced into rounds
Whole burrata
INSTRUCTIONS
Step 1: Blitz your coriander, parsley, olive oil, everyday house dressing and capers to make your salsa verde. Season to taste.
Step 2: Fry your courgettes in a hot pan with olive oil until golden.
Step 3: Plate your rocket, butter beans and courgette. Tear over burrata.
Step 4: Dress with your salsa verde and serve immediately.
