Big thank you to the lovely Charlie’s Smokehouse who sent me the most delicious goodies to try! Including his infamous smoked trout. It was SO delicious, the quality is ridiculously good. I hope you enjoy this super simple recipe that can be enjoyed for lunch or as a tasty side.

Serves 2:
180g orzo
A handful of peas
200g smoked trout
8 cherry tomatoes, halved
1/2 cucumber, diced
A handful of rocket
1/2 lemon, juiced
A handful of spring onions, sliced
1/2 red onion, diced
A few springs of dill, finely chopped
Generous squeeze of everyday house dressing
A glug of extra virgin olive oil
Chili flakes, to garnish

Method:
1. Cook your orzo in boiling salted water, as per packet instructions. Add the peas 2 mins before draining.
2. In a large bowl, add your rocket, trout, cucumber, cherry tomatoes, red onion, dill and spring onions. Squeeze over the lemon juice, olive oil, a pinch of salt and a generous drizzle of your everyday house dressing.
3. Stir through your cooked orzo and peas, and scatter over the chilli flakes to garnish. Squeeze a little more everyday house for good measure! Enjoy! X
