Whip this up in 5 minutes. Quick, easy, filling, healthy. This one ticked a lot of boxes for a quick WFH lunch.
Serves 1:
1/2 packet of mangetout, roughly sliced
3 spring onions, finely sliced
1/2 a packet of stir fry veg
2 pieces of cooked salmon, flaked into pieces
1/2 packet of cooked noodles
A good drizzle of miso & sesame dressing
Sesame seeds, to garnish
1. Add some oil in a frying pan over a medium high heat. Add your spring onions and mangetout for a couple of mins, until starting to soften.
2. Throw in your stir fry veg, and stir for 1-2 mins. Then add your cooked noodles, and flake through your salmon.
3. Drizzle generously with your miso & sesame dressing, and top with sesame seeds. Enjoy!
