Tahini Lime Buddha Bowl

Sexy Salads, Tahini Lime Buddha Bowl, eating well while obsessing over flavour. And so quick and easy to make.

 

INGREDIENTS

Serves 2:

1 sweet potato, cubed

All Dressed Up Spicy Harissa dressing

1 cup black rice

2 handfuls edamame beans

⁠½ red cabbage, finely sliced

⁠1 carrot, peeled into ribbons

⁠⅓ cucumber, sliced

⁠½ avocado

All Dressed Up Tahini Lime dressing

Pomegranate seeds, pistachios, sesame seeds (optional)

INSTRUCTIONS


Step 1: Toss the sweet potato in olive oil, salt, and Spicy Harissa dressing.

Step 2: Roast at 200°C for 30–35 minutes until caramelised. Cook the black rice and edamame, and prepare the raw veggies.

Step 3: Pile everything into a bowl and drench in Tahini Lime dressing.

Step 4: Top with the avocado and crunchy seeds.

Finish with an extra drizzle (always).
