Thai-Inspired Chopped Salad

The answer to making sure every single forkful is mouthwateringly moreish? A chopped salad. Every flavour. Every texture. Every single mouthful.

 

INGREDIENTS

Serves *up to you!:

Rice
Chicken mince
All Dressed Up Miso Sesame dressing
White Cabbage
Mango
Thai Basil
Peanuts
Red Chilli

 

INSTRUCTIONS


Step 1: Put rice on to cook according to package instructions, once cooked, leave to cool.

Step 2: Cook your chicken mince over a medium-high heat in a pan until golden and crispy. We like to add some Miso Sesame dressing to the pan towards the end of cooking to give it extra flavour!

Step 3: Add the white cabbage, de-stoned mango, thai basil and peanuts to a chopping board. Chop together and slide into a large bowl, adding in the cool rice and chicken mince. Toss well.

Step 4: Pop your chopped salad into a tupperware, top with fresh red chilli if you have it. Dress again at work for maximum flavour and minimal soggyness.
