The perfect zingy salad with a dressing worth obsessing over more than your first crush.
INGREDIENTS
Serves 2
1 cup black rice
250g king prawns
Two handfuls edamame beans
Half a red onion, sliced thinly
One large mango
1 spring onion
Handful of mint
1 avocado, cubed
Half a lime
All Dressed Up Miso Sesame dressing
INSTRUCTIONS
Step 1: Boil 1 cup black rice until tender (approx 20 mins), drain and cool.
Step 2: Pan-fry 250g king prawns until juicy & blanch 2 handfuls of edamame.
Step 3: Cube 1 mango and 1 avocado. Slice ½ a red onion and 1 spring onion.
Step 4: Throw it all in a bowl with a handful of fresh mint and the juice of ½ a lime.
Step 5: The main event: Drench it in Miso Sesame dressing.
