No messing around here, we want quick, easy and delish. This crunchy, crave-worthy butter bean panzanella salad comes together in 5 minutes!
INGREDIENTS
Serves 3:
Stale ciabatta/croutons
Everyday House dressing
1 jar/tin of butter beans
Sundried tomatoes
Pink pickled onions
Basil, torn
Goats cheese, crumbled
INSTRUCTIONS
Step 1: If you are using ciabatta for homemade croutons, tear up your bread and coat with oil and salt on a baking tray. Pop in the oven for 5-10 minutes until golden and crisp.
Step 2: In a large bowl, squeeze in copious amount of dressing. Then throw in your butter beans, sundried tomatoes, pink pickled onions, basil and crumbled goats cheese.
Step 3: Toss to coat.
This will keep in the fridge for 3-4 days. When you are ready, scoop out a portion and crumble over your golden croutons for oh-so-satisfying crunch.
