I’m sorry to all the egg mayo lovers out there who I may offend, when I know there are probably a lot of you! However, I’m not typically one of them. BUT, swapping out the mayo for the everyday house worked really well here, and made a super quick and easy 10 minute lunch.
Serves 1:
2 slices of really nice sourdough, generously buttered
2 eggs
1 tsp capers
Handful of dill, roughly chopped
A generous drizzle of everyday house dressing
Salt and pepper
Method:
1. Boil your eggs for 6-7 mins for a soft boiled egg. Once they’re cooked, run under cold water and peel off the shell.
2. Smash your eggs up with a fork, and season with capers, dill, a good drizzle of your everyday house dressing and some salt and pepper.
3. Butter 2 thick pieces of sourdough and mush your egg mixture on top.
4. Wrap your sandwich in a piece of baking parchment and cut it down the middle (this will help everything not to fall out!) enjoy!
