There’s not much I love more in life than a pasta salad, and this one features some of my favourite fresh Italian ingredients with the everyday house, to give it a nice sharp, mustardy finish
Serves 2:
180g pasta
1/2 tub of artichokes
A handful of peppadews
1/4 of a chorizo ring, sliced
A handful of fresh basil, torn
A handful of pine nuts
Parmesan, shaved
A generous drizzle of everyday house dressing
Chilli flakes
A handful of rocket
1. Cook your pasta in salted water according to packet instructions.
2. Meanwhile, add your chorizo into a frying pan (no oil needed) and fry up until crispy and it’s releasing its gorgeous oil. Roughly chop your artichokes and peppadews.
3. Toast your pine nuts (making sure not to burn!)
4. Drain your pasta and pour over your chorizo oil, chorizo, artichokes, fresh basil and peppadews. Very generously drizzle over your everyday house dressing and stir through the rocket. Top with your pine nuts and shavings of Parmesan. Then sprinkle over some chilli flakes and eat straight from the bowl.
