Fried golden nuggets of gnocchi with rich chorizo, pine nuts, roasted peppers and rocket, finished and lashings of Tahini Lime dressing.

Olive oil
Sunny & Luna pumpkin gnocchi
Chorizo, sliced
Pine nuts
Roasted peppers, chopped
Sun-dried tomatoes, chopped
Fresh basil, roughly chopped
Tahini lime dressing
Rocket
Parmesan, shaved
INSTRUCTIONS
Step 1: Heat a generous glug of olive oil in a pan over medium–high heat. Add the pumpkin gnocchi and fry until golden and crisp on the outside. Set aside.
Step 2: In the same pan, fry the chorizo until deeply crisp and juicy. Remove the chorizo, then toast the pine nuts in the rendered chorizo oil until golden.
Step 3: In a large bowl, combine the fried gnocchi, chorizo, pine nuts, roasted peppers, sun-dried tomatoes and a generous handful of chopped basil.
Step 4: Drizzle generously with tahini lime dressing and toss gently to coat.
Step 5: Finish by folding through the rocket and topping with plenty of shaved parmesan. Serve warm.
