I am eating this on repeat at the moment! It’s so quick and easy, and a great one to have made up in the fridge for days when you’re short on time, and working from home. It’s also a great way to use up all your seasonal veg the miso dressing combined with the peanut butter BANGS.
Serves 2:
2 soba noodle nests
A handful of edamame beans
1 red pepper, sliced
1 carrot, peeled into ribbons
1/4 red cabbage, shaved into ribbons
2 chicken breasts, poached
A handful of fresh coriander
1 heaped tsp peanut butter (I love Pip and Nut)
Generous squeeze of miso & sesame dressing
Sesame seeds to garnish (I love the Korean Pantry Korean flakes!)

Method:
1. Cook your noodles as per packet instructions. Add the edamame beans 2 mins before draining.
2. Poach your chicken, and prep your veg.
3. Add the peanut butter to the bottom of a jar (Bold Bean Co jar came in handy!) pour over 1-2 tbsp boiling water, and add a good squeeze of your miso & sesame dressing. Mix well.
4. Fill up your jar! Shake well and top with coriander and sesame seeds.
