We probably have this for supper at least once a week at home. It's got all the right textures, and a lot of crunch from the homemade croutons. It feels more like a treat when having steak, but arguably it is even easier and quicker than most other meats. And the everyday house just gives it just the right measure of sweet and saltiness.
Serves 2:
1 bag of lambs lettuce
2 sirloin steaks (you could use any)
1/2 baguette, torn into pieces
1/4 jar of peppadews
Handful of radishes, thinly sliced
Parmesan, shaved
A generous drizzle of everyday house dressing
1. Make your croutons by tearing your baguette into small pieces and tossing in oil and salt. Put into a hot oven (200c) for around 10 mins, until golden and crunchy.
2. In a very hot pan, cook the steaks to your liking. I generally aim for 1-2 mins on each side (depending on the thickness). Rest for a few minutes before slicing.
3. Put your lambs lettuce into a bowl, with the peppadews, radishes and lots of shaved Parmesan. Slice your steak, and place into the bowl. Then top with your crunchy croutons and a very generous drizzle of everyday house dressing.
