Who doesn’t love a potato salad?! This is the perfect side to go with pretty much any BBQ dish. Whip it up in a matter of minutes, and enjoy it with slow cooked meats, BBQ grills or simply a delicious green crunchy salad.
Serves 2:
Ingredients:
750g new potatoes
4 rashers streaky bacon
1 bunch spring onions, finely chopped
1 tbsp capers
1 tbsp gherkins or cornichons, finely chopped
1 handful chopped dill
1 handful chopped parsley
Generous squeeze of everyday house dressing
1. Boil the potatoes for about 15-20 mins until fork tender.
2. Fry the bacon rashers until golden and crispy, and then chop into 1cm pieces once cool.
3. Combine the potatoes, spring onions, capers, gherkins and herbs with a generous drizzle of dressing.
4. Plate up and finish with the crispy bacon pieces!
