Warmer weather calls for lighter, zesty, delicious food, and this one is a quick, easy win. You could mix this one up to work with whatever greens you have in the fridge. Super simple, super delish.
Serves 1:
1/2 courgette, cubed
1/2 a savoy cabbage, sliced
200g tenderstem broccoli, ends removed + chopped
1/2 a jar of Bold Bean Co queen chickpeas
A handful of smoked almonds, crushed
A generous drizzle of tahini & lime dressing
Parmesan, grated to finish
1. Heat some oil over a medium heat in a frying pan. Add your courgette, and let it soften a little. Then add your cabbage and broccoli and stir through until cooked.
2. Pour in your beans and stock and let them warm through.
3. Assemble into a bowl, then throw over your chopped almonds and drizzle generously with your tahini & lime dressing.
4. Finish with some grated parmesan. Enjoy!
